It is obtained from the thigh of the adult pig, reared and fed rigorously. The meat is processed according to ancient methods handed down with care for generations: from cutting, to salting, up to seasoning which makes it unique and delicious.
The cured breech, with a delicate and sweet flavor, with a bright red color, is a highly digestible, genuine food suitable for all diets.
Even today, in the old taverns of the Lower Parma area, the cured breech is served with ceremonious calm, accompanied by curls of soft butter , homemade bread and good Lambrusco.
